Vegi Roast - Tutti Fruiti


Vegi Roast Recipe - Delicious either as a main or a side order.

Preparation: 40 minutes

Ingredients:
250g green beans (runner beans)
1 tsp freshly chopped rosemary
1 tsp freshly chopped thyme
1 tsp freshly chopped oregano
1 tsp freshly chopped chives
2 shallots or small onions
1 Green sweet pepper
2 chilies (medium hot)
1 Large sweet potato
8 Large black olives
4 Cherry tomatoes
4 Fresh mint leaves
2 Fresh sage leaves
½ Lemon (juice)
2 Fresh Beetroot
2 Carrots
2 Garlic cloves
2 Parsnips
2 Radishes
1 Bay leaf
Olive oil

  • Pre-heat broiler or oven to 220 degrees.
  • De-seed chilies and pepper.  Chop into fine strips and add to a large baking tray.
  • Add whole radishes, olives cherry tomatoes and bay leaf.
  • Peel and chop remaining vegetables into chunks.
  • Finely chop herbs and add to baking tray.
  • Drizzle with olive oil and add juice of ½ lemon.
  • Season with salt and pepper and broil or bake for 25 minutes.
  • Check every 10 minutes and stir gently to avoid vegetables drying out.
