Vegetarian Stew
Portuguese Vegetarian Stew Recipe - To
make the stew recipe easier
to
follow, read the recipe in full, peel
and chop vegetables in advance
and have them ready before
cooking.

Serves: 4
Preparation: 30 minutes
Ingredients:
500g Soya chicken style pieces
300 g Large new potatoes
250 g Frozen peas
1 Table spoon of tomato puree
1 Table spoon virgin olive oil
1 Table spoon apple vinegar
2 Fresh carrots
2 Large tomatoes
2 Red sweet peppers
2 Red onions
3 Garlic cloves
2 tsp paprika
1 tsp turmeric
¼ tsp mustard seeds
¼ tsp caraway seeds
2 Bay leaves
- Peel garlic and onions, stir fry for 30
seconds on high heat with olive oil and vinegar in a large
pan. Then turn heat down.
- De-seed and chop peppers and
tomatoes. Add to the pan and stir for 30 seconds.
- Add chopped soya chicken styles pieces,
paprika, tomato puree, bay leaves, turmeric, mustard seeds
and caraway seeds.
- Stir for 1 minute and add 750 ml water.
- Season with sea salt and ground black
pepper.
- Add finely sliced carrots and potatoes
(peeled and in quarters).
- Turn heat up and allow to boil for 10
minutes.
- Stir occasionally. Check seasoning.
- Add frozen peas and cook for a further
4 minutes.
- Ready to serve. Sauce is
delicious to dip with bread.
