Vegetarian Rice
This vegetarian rice recipe is easy to make and it is
delicious.
A
suggestion for a Halloween rice dish, using your left over pumpkin.

Serves: 2
Preparation: 30 minutes
Ingredients:
200g Quorn pieces
100g White rice
100g Pumpkin cubes
2 Small tomatoes
2 Small onions
150g Fresh Cabbage
1/2 tsp Cumin seeds
2 tsp Soy sauce
5 tsp Olive oil
1 tsp Honey
6 Chili seeds
1/2 Lemon
- Peel and slice onions
finely.
- Stir fry onions in hot pan with olive oil, Quorn pieces and fine
strips of
cabbage and small cubes of pumpkin. Stir for 2 minutes on high
heat.
- Add cumin seeds, rice, chili seeds and soy sauce. Turn heat down.
- Add chopped tomatoes, honey and 500 ml of hot water.
- Season with salt and pepper.
- Allow rice to simmer for at least 7 minutes or until rice is almost
cooked.
- Stir very occasionally and do not allow to dry to much before rice is
cooked through.
- Cover rice with lid and turn off the heat. Leave it to for 5 minutes.
- Add juice of half lemon towards the end for a fresh scented taste, a
great contrast to the heat of the chili and cumin seeds.
It is great when you can gather some ingredients together, whatever it
is left in the cupboard or fridge and come up with a tasty dish.
This recipe makes 2 generous portions but you can serve up to 4 people
as a side dish.
