Vegetarian Pie Recipe And Cooking Tips

At Christmas I tend to cook to many vegetables. But there are many ways to re-use cooked vegetables.
Usually left over vegetables can be used in soups, stews or fish cakes.
By adding some fresh ingredients you can create another delicious meal.

Here is my Vegetarian Pie Recipe:

Serves: 4
Preparation: 40 minutes

Ingredients:
500 ml ready puff pastry
100g Quorn beef style pieces
100g mushrooms
100ml red wine
100g roasted potatoes
50g roasted parsnips
50g roasted carrots
50g fresh coriander
1 tsp cider vinegar
1 free range egg
1 onion
1 garlic clove
1 tsp olive oil

- Put oven on at 220 degrees Celsius.
- Stir fry Quorn beef pieces in olive oil.
- Stir for 30 seconds on high heat with
vinegar.
- Add chopped onion and garlic.
- Sir for 30 seconds, add wine and butter.
- Take off the heat after 2 minutes
simmering.
- Stress the pastry into a large circle.
- Make small circle for lid.
- Cover a round pre-greased baking tray with
large pastry circle.
- Pour roasted vegetables and fried Quorn
pieces inside pie.
- Add chopped mushrooms and coriander on
top.
- Cover with pastry lid.
- Brush beaten egg over the pie and seal the
pastry lid.
- Bake in the oven for 30 minutes or until
golden.
- Serve on its own or with green salad.
