Vegetarian Beef Recipe

Ingredients:
 100 g White rice
 1 Table spoon Wild rice
 1 Sweet red Pepper
 150 g Quorn beef style pieces
 250 g Chili Kidney beans (drained)
190g Aubergine pesto
 6 bite size broccoli pieces
 1/2 tsp Piri Piri sauce (medium heat)
  2 Garlic cloves
   Salt and pepper
 



    - Boil rice for about 7 minutes, drain and set aside.
    - Peel and crush garlic.
    - Heat pan, add garlic and stir for about 30 seconds before adding the rice.
    - Add beans, broccoli, beef style Quorn and stir for 2 minutes on high heat.
    - Pour Aubergine pesto to pan together with chopped pepper and add
       300ml boiling water on medium high heat.
    - Add salt and pepper, stir gently.  Allow to simmer for 10 minutes on low heat.
    - Serve hot with chips or salad.
