Vegetable Burger


Vegetable Burger Recipe

Preparation: 25 minutes

Ingredients:
2 Medium potatoes
25 g chick peas
25 g chick peas (boiled)
1 tsp chopped coriander
1 Garlic clove
2 table spoons bread crumbs
2 table spoons plain flour
2 Free range eggs
1 Medium carrot
Olive oil

  • Boil potatoes with garlic for 5 minutes. Drain water well.
  • Blend potatoes with 1 egg, coriander and 1 carrot.
  • Add green peas and chick peas to the mix.  
  • Season with salt and pepper.
  • Form a burger shape and add flour.
  • Dip into egg mix, then bread crumbs and deep fry for 2 minutes on either side on medium heat.
  • Serve in a bun with lambs baby lettuce and tomato.
I created this recipe by using left overs of whatever I could find in the fridge. 
You can use ingredients you already have at home to make delicious snacks.  Allow your creativity and taste buds to take over!
