Vegan Sausage Casserole Recipe

Ingredients:
200g Vegan sausage sliced in chunks
1 Table spoon yeast extract
1 tsp Garlic powder
1 tsp Brown sugar
1 tsp Soya butter
1 tsp Paprika
1 Table spoon olive oil
1 Small onion finely chopped
1 Small potato finely chopped
3 Medium tomatoes
200g Fresh mushrooms sliced
Salt and pepper

  • Stir fry onion, potato and vegan sausage with olive oil.
  • Add butter.  Season with salt and pepper.
  • Stir on low heat for 2 minutes. 
  • Add chopped tomatoes, spices, yeast extract and 600ml water.
  • Turn heat up and allow to simmer for 10 minutes.
  • Add mushrooms and check seasoning.
  • Serve with basmati and wild rice.
