Vegan Rice


Vegan Rice Recipe - A simple recipe with great nutritional value

Ingredients:
100 g Rice
50 g Portobello Mushrooms
50 g sweet corn loose
50 g green peas
1 Table spoon Soya butter
½ Sweet red pepper
1 Garlic clove
¼ tsp Caraway seeds
¼ tsp Nutmeg
¼ Mustard seeds
Olive oil
Salt and Pepper

  • Slice and seal mushrooms by frying for 1 minute in pre-heated pan with 1 tsp olive oil.  Drain and leave to one side.
  • Wash rice 3 times and drain.
  • Peel garlic, chop it with the sweet pepper and take to the pan.
  • Stir for 30 seconds, add wet rice and stir for another 30 seconds on high heat.
  • Add mustard seeds, caraway seeds and nutmeg.
  • Add 50 ml water and turn heat to medium.
  • As the water dries, add another 50 ml water until rice is almost cooked.
  • Add mushrooms, peas, sweet corn and butter. 
  • Season with salt and pepper.
  • Stir and cover with lid. Leave for 5 minutes.
  • Ready to serve.
