Vegan New Potatoes Recipe

Ingredients:
500 g organic new potatoes
5 Fresh Basil leaves
1 tsp fresh lemon thyme leaves
1 tsp fresh mint
1 tsp fresh chives
1 table spoon olive oil
Black pepper and salt to taste

  • Cut new potatoes into halves and boil for 5 minutes.
  • Drain and place in bowl.
  • Chop herbs and pour olive oil, mix thoroughly.
  • Add chopped herbs to bowl with salt and pepper to taste, fold gently.
This vegan recipe is best served hot but also delicious as a cold snack.
