Ingredients:
500g potatoes
300 ml soya milk
2 tsp soya butter
¼ tsp mustard seeds
1/4 tsp grated nutmeg
5 Table spoons chopped Cucumber
1/2 tsp chopped fresh oregano
1/4 tsp chopped fresh mint
1 tsp clear Honey (optional)
2 Table spoons of Olive Oil
Salt and pepper
- Peel, chop and boil potatoes for 10 minutes.
- Add salt and mustard seeds to potatoes, season to taste.
- Meanwhile, make the sauce by blending chopped cucumber (unpeeled), oregano, mint, olive oil and honey. Blend until sauce thickens into a dressing.
- Season the sauce with salt and pepper.
- Once potatoes are boiled, drain and mix with butter and nutmeg.
- Mash potatoes by hand, adding soya milk slowly to achieve a flexible but firm consistency.
- Place mash portion on middle of serving plate.
- Carefully pour the sauce in a circle around the plate and over mash.
- Serve with seasonal vegetables.
