Vegan Delight


Vegan Delight Recipe - Vegan tofu recipes are becoming more popular. 

Tofu quality has improved and is now available in more shops.  This ingredient is so versatile, you can use it for sour or sweet dishes.

Serves: 2
Preparation: 35 minutes

Ingredients:
100 g Tofu
10 Goji berries
1/2 lime
2 Fresh sage leaves
Olive oil
Salt
Pepper
 
  • Chop Goji berries with chopped sage, 4 tsp olive oil and juice of half lime zest to make the marinate sauce. 
  • Season with salt and pepper.
  • Cut tofu into cubes (3cm x 3cm) and soak into marinate sauce for about 10 minutes (for best results prepare this in advance and soak for 2 hours).
  • Deep fry cubes for 30 seconds or until golden.
  • Serve with salad.
