Vegan Chick Peas Recipe - A Low fat salad with plenty of flavour

Ingredients
500 g Boiled Chick peas
1 Avocado
2 Peppers
1/2 Clementine or small orange (juice)
1 Table spoon Olive oil
2 Table spoons Sweet Chili Sauce
1 tsp Fresh chives
½ Chopped fresh sage
¼ Chopped oregano leaves
¼ Chopped fresh thyme leaves
Salt and pepper to taste
  • Cut peppers into quarters and de-seed.
  • Grill peppers for 6 minutes each side, until soft enough for outer skin to peel off easily.
  • Wash peppers, remove outer skin, cut into thin strips and put in a large bowl.
  • Chop chives, sage, thyme finely and add to the bowl. 
  • Season with salt and pepper.
  • Add juice of half a clementine, olive oil, chick peas, sweet chili sauce and mix together gently.
  • Spoon chick peas and pepper into corner of serving plate. 
  • Serve with avocado.
