Veg Stir Fry


Chicken Style Veg Stir Fry Recipe - Simply delicious!

Ingredients:
100g Soya Chicken style pieces (Quorn brand)
8 Small Asparagus (chopped and thin sliced)
8 Baby sweet corn (chopped in half)
½ Onion
1 Bay leaf
1 Carrot
5 New Potatoes
¼ tsp chopped dill
50 ml White wine
4 tsp Soy Sauce
2 tsp Rice vinegar
1 tsp Honey
2 Garlic cloves
1 tsp Butter

  • Slice and boil potatoes for 2 minutes. Drain.
  • Peel and chop onion and garlic.
  • Add to the pan with olive oil, bay leaf, chicken pieces on high heat.
  • Add Soy sauce, rice vinegar, chopped asparagus and sweet corn.
  • Pour wine and 50 ml water with honey.
  • Season with salt and pepper.#
  • Turn heat down and stir regularly for 4 minutes.
  • Add 2 table spoons water if necessary.  Stir until asparagus is soft to the bite.
  • Take off the heat.  Add chopped dill and butter.
  • Ready to serve.
