Turtle Beans Casserole With Mango
- A simple recipe for a vegetarian casserole

Ingredients:
200g Quorn pieces (Vegetarian Beef Style)
1 Small mango (diced)
200g Turtle Black Beans (boiled)
250g New potatoes
1/2 Cup white wine
1/2 Cup Coconut milk
1 Cup loose sweet corn
1 Sweet red pepper
1 Medium hot chili
1 tsp Cumin seeds
5 tsp olive oil
1 tsp butter
1 tsp ginger powder
2 tsp Soy Sauce
1 tsp Brown sugar
2 tsp Paprika
1 Medium onion
Salt and pepper
- Peel and chop onion. Add to a deep pan with olive oil until soften.
- Add Quorn pieces (frozen is fine), chopped red pepper, chili and
diced mango.
- Pour wine, Soy sauce and coconut milk. Season with salt and
pepper.
- Add brown sugar, butter, cumin, paprika, and ginger. Stir
regularly for 2 minutes.
- Add peeled and chopped new potatoes, beans, and sweet corn with 600ml
water.
- Allow to simmer for about 50 minutes. Stir occasionally.
- Check seasoning and adjust to taste.
- You may need to add more water if sauce is to dry, add 1/2 cup of
water each time and allow to simmer before adding
any more.
- Serve hot on its on or with rustic bread.
These Black Turtle lentils start off black but will lighten up once
cooked.
If you buy dry beans, they need to be soaked over night and boiled for up
to 2 hours to become tender.
