Tomato Rice With Spinach
Portuguese Tomato Rice Recipe -
This is a Portuguese rice
tomato recipe
to suit vegetarians.

Preparation: 25 minutes
Ingredients:
3 Fresh Tomatoes
200g Soy Quorn pieces
200g Basmati Rice
5 Fresh mint leaves
1 Table spoon chopped wild garlic
3 Table spoons sweet tomato sauce
20 Fresh Spinach leaves
2 Garlic cloves
1/2 tsp French mustard
1/4 tsp Chopped fresh thyme
1 tsp Rice vinegar
2 tsp Olive oil
1 L Hot water
- Chop tomatoes and add to a hot pan with olive oil.
- Add Quorn pieces, vinegar, mint leaves, garlic, wild garlic, French
mustard and thyme.
- Stir for 2 minutes on high heat, then add the rice.
- Fold the rice gently before adding 500 ml hot water.
- Season with salt and pepper.
- Allow to simmer for 5 minutes, adding water slowly, about 100ml
each time so rice does not dry out.
- Add spinach leaves about 1 minute before serving.
Helping to retain the healthy properties of spinach like iron
and Vitamins.

Remove from the heat when rice
is semi soft to the bite.

I was born in Azambuja, a small town located about 40 miles from
Lisbon, Portugal.
On the
outskirts of Azambuja, rice fields can be
seen for miles.
Although, this is may not be common knowledge, Portugal exports rice to
various countries in Europe like Germany and Spain.
Rice is planted in April and harvested in September/October.
