Sweet And Sour Quorn Recipe -

Ingredients:
100g Quorn (Chicken Style stir fry pieces)
2 Small Potatoes
1 Mango
50g Peas (boiled)
50g Sweet corn (loose and boiled)
1 Red pepper
2 tsp turmeric
2 Tomatoes
3 Garlic cloves
½ Onion
1 Bay leaf
2 Table spoons olive oil
2 Table spoons White port
1 tsp rice
vinegar
1 tsp Soy sauce
1 tsp Caraway seeds
1
tsp Mustard seeds
- Add Quorn pieces to deep pan
with olive oil, Soy sauce, rice vinegar,
caraway seeds, bay leaf, turmeric,
mustard seeds and port.
- Stir for 3 minutes on medium high heat.
- Finely chop tomatoes, red pepper, onion
and garlic and add to the
pan, on low heat stir regularly.
- Add 500 ml water.
- Peel and chop potatoes and mango into
small cubes (3x3cm) and
add to the pan, still on low heat.
- Stir gently until sauce thickens or
potatoes soften.
- Add pre boiled sweet corn and peas and
cook for a further 2 minutes.
- Serve with rice.
