Watermelon Summer Salad

Preparation: 10 minutes
Ingredients:
250g fresh water melon
1 lemon
1 table spoon organic bean sprouts
Goji berries
3 Small Radishes
1 tsp Pumpkins seeds
1 small onion
2 Tomatoes
1 Small lettuce
8 pitted black olives
1 tsp Soy sauce
- De-seed and chop tomatoes into
quarters. Add to a large bowl.
- De-seed and chop water melon into large
chunks.
- Peel and finely slice onion and
radishes.
- Add Goji berries, pumpkin seeds, sprout
beans, olives, soy sauce and juice of half lemon to the bowl.
- Season with salt and pepper, gently mix
salad.
- Serve in a bed of lettuce.
Sprout
beans belong to the
lentil family and are very
easy to grow indoors.
