Stuffed Tomatoes
This Stuffed Tomatoes recipe is so
simple and easy to make.
A great starter or healthy snack.

Preparation: 25 minutes
Ingredients:
3 Ripe Tomatoes
Fresh Coriander garnish
1 Cup of paneer or ricotta cheese
3 Black olives (pitted and sliced)
1 Small onion
1 Garlic clove
Olive Oil
Salt and pepper
- Peel and slice onion with garlic. Stir fry with 1 tsp olive oil
until soften.
- Scoop flesh from inside each tomato. Save flesh for a sauce recipe.
- Spoon stir fried onions in equal amounts into each tomatoes.
- Add about 1 tsp chopped coriander and season with salt and pepper.
- Add sliced olives also but same 3 slices for garnish later.
- Stuff tomatoes with 1 table spoon of paneer and little drizzle of
olive oil.
- Bake in pre-heated oven for 20 minutes at 220 degrees Celsius.
The aroma coming out of
the oven is amazing.
