Stir Fry
Jardiniere Stir Fry Recipe
This
vegan and vegetarian recipe
is low fat, full of flavour
antioxidants.

Ingredients:
200 g Chick peas
100 g Mange tout
100 g Baby sweet corn
2 Organic tomatoes (slices)
1/2 Orange pepper
1 Yellow pepper
1 Red pepper
1/2 Corgette
2 Soup spoons Soy sauce
2 Soup spoons Rice vinegar
1 Soup spoon Avocado oil
1/2 Lemon juice
1 tsp Demerara brown sugar
- De-seed peppers, cut into strips together with courgette
- Heat wok on high heat, add Avocado oil.
- Add peppers and toss for 30 seconds.
- Pour Soy sauce, Rice vinegar, lemon juice and sugar.
- Add remaining ingredients except tomatoes and toss gently for about 5 minutes on high heat.
- Ingredients should not stick to the pan, turn heat down to medium and stir regularly.
- Serve hot with fresh sliced tomatoes.
