Spring Salad


Spring Salad Recipe - This is a great suggestion for a vegetarian picnic recipe.

Preparation: 5 minutes

Ingredients:
1 Cucumber
3 Organic tomatoes
10 Fresh Basil leaves
50g grapes
2 Baby lettuce
25g rocket salad
2 Gherkins
1 Table spoon olive oil
Salt and pepper to taste
1 tsp rice vinegar
  • Wash all vegetables.
  • Place lettuce leave in serving dish.
  • Slice tomatoes and place around dish.
  • Slice cucumber and place on top of tomato slices.
  • Chop rocket into large chunks and place in middle of the dish.
  • Add finely chopped gherkins, grapes and basil leaves.
  • Pour olive oil and rice vinegar over the dish.
  • Season with salt and pepper.
  • Serve cold as a starter or main dish.
Grapes promote healthy heart, improves eyesight, help enhance blood flow, reduce kidney stones and fight cancer.
