Spring Salad
Spring Salad Recipe -
This
is a great suggestion for
a vegetarian picnic recipe.

Serves: 4
Preparation: 5 minutes
Ingredients:
1 Cucumber
3 Organic tomatoes
10 Fresh Basil leaves
50g grapes
2 Baby lettuce
25g rocket salad
2 Gherkins
1 Table spoon olive oil
Salt and pepper to taste
1 tsp rice vinegar

Wash all vegetables.
- Place lettuce leave in serving dish.
- Slice tomatoes and place around dish.
- Slice cucumber and place on top of
tomato slices.
- Chop rocket into large chunks and place
in middle of the dish.
- Add finely chopped gherkins, grapes and
basil leaves.
- Pour olive oil and rice vinegar over
the dish.
- Season with salt and pepper.
- Serve cold as a starter or main dish.
