Spaghetti
Spinach Spaghetti Recipe - Tasty and
easy to make.
I like to eat this pasta dish with a topping of grated Parmesan cheese
and chopped coriander. How do you like to eat yours?

Serves: 2
Preparation: 15 minutes
Ingredients:
20 Fresh spinach leaves
1 Cup Loose sweet corn
1 Cup grated cheese
2 Table spoon olive oil
250g Spaghetti pasta
2 tsp Soy sauce
1 tsp vinegar
1/2 tsp Demerara sugar
1 Small onion
10 Chili seeds
2 Garlic cloves
Salt and pepper
- Boil spaghetti for 2 minutes. Drain, drizzle with olive oil and leave
to one side.
- Finely chop onion and garlic.
- Stir fry chopped onion and garlic in large pan or wok with 1 table
spoon of olive oil. (Pre-heat pan before adding ingredients).
- Stir
until onion has softened.
- Add Soy sauce, vinegar, chili seeds, sweet corn, sugar, spinach and
1/2 cup of water.
- Season with salt and pepper
- Stir on high heat for 2 minutes before adding spaghetti and cheese.
- Gently fold together for 1 minute to infuse all ingredients and serve
hot.

contains high levels of iron and calcium essential to healthy
bones and kidney function. Also rich in
antioxidants.
