Shiitake Mushroom Recipe

Preparation: 10 minutes

Ingredients:
200g Shiitake medium size mushrooms
1 Sweet yellow Pepper
½ Cucumber
2 Spring onions
2 Courgettes
1 Yellow chili
50g Rocket leaves
1 Table spoon olive oil
Salt and pepper

  • Peel and finely chop onions and chili together with olive oil.
  • Stir fry until golden.
  • Slice courgettes, chop pepper into strips and add to frying pan or wok. Toss pan regularly on high heat for about 2 minutes.
  • Season with salt and pepper.
  • Chop cucumber into cubes and sliced mushrooms.  Add to the pan.
  • Toss pan regularly for another 2 minutes.
  • Serve hot with fresh rocket leaves.
Mushrooms can help control blood pressure, lower cholesterol, kill bacteria, fight cancer and strengthen bones.
