- Peel and finely chop onions and chili together with olive oil.
- Stir fry until golden.
- Slice courgettes, chop pepper into strips and add to frying pan or wok. Toss pan regularly on high heat for about 2 minutes.
- Season with salt and pepper.
- Chop cucumber into cubes and sliced mushrooms. Add to the pan.
- Toss pan regularly for another 2 minutes.
- Serve hot with fresh rocket leaves.
