Salmon Fusilli Recipe

Ingredients:
100g boiled chick peas
400g mayonnaise
200g Fusilli pasta
2 Salmon fillets (700g)
1 tsp fresh dill (finely chopped)
1 Medium cucumber
1 tsp olive oil
Salt and pepper to taste
  • Boil salmon fillets for 10 minutes, drain, divide each fillet into 4 pieces and allow to cool down.
  • In a separate pan, boil pasta for 2 minutes, wash under cold water tap, drain, sprinkle olive oil and set aside.
  • Peel half cucumber and chop into small cubes (0.5cm thick).
  • Finely chop dill and mix with cucumber in a large bowl.
  • Season with salt and pepper.
  • Add chick peas, salmon and pasta to the bowl.
  • Pour mayonnaise and fold evenly.
  • Serve with boiled egg and fresh tomato slices.
  • Best served chilled (at least 30 minutes in the fridge).

    Dill contains anti-cancer healing agents.  This ingredient can also be used to treat digestive disorders, flatulence and colds.

    Chick peas are low in calories, good source of Vitamin B6, folate, magnesium, fibre and zinc. It can help to lower risk of cancer and heart disease.  This ingredient is also rich in protein, excellent to repair damaged skin and to boost energy levels.
