Salmon Fish Soup
Salmon Fish Soup Recipe

Ingredients:
150g Salmon fillet
6 Medium new potatoes
½ Lemon juice
1 table spoon olive oil
1 tsp cider vinegar
½ tsp Cayenne pepper
2 tsp fresh parsley (chopped)
1 tsp fresh rosemary (chopped)
1 tsp fresh ginger
1 Sweet red pepper
1 Sweet green
pepper
2 Garlic cloves
1 Courgette
1 Bay leaf
1 Onion
- Chop unpeeled
new potatoes and courgette into quarters then into thin chunks.
- De-seed peppers and finely chop.
- Peel and finely chop onion, ginger and
garlic.
- Add chopped vegetables, bay leaf and
chopped rosemary to deep pan on high heat with olive oil.
- Add vinegar, lemon juice and Cayenne
pepper. Season with salt and pepper.
- Stir regularly for 3 minutes (do not
allow to dry).
- Add small chunks of salmon fillet (1cm
x 2cm) and gently stir for 30 seconds.
- Turn heat down and add 500 ml
water.
- Check seasoning, stir occasionally and
allow to cook for 7 minutes.
- Remove bay leaf and take off the heat.
- Serve with roughly chopped parsley on
top.
