Salmon Fish Soup


Salmon Fish Soup Recipe - A fish soup recipe that tastes as good as it looks.

Ingredients:
150g Salmon fillet
6 Medium new potatoes
½ Lemon juice
1 table spoon olive oil
1 tsp cider vinegar
½ tsp Cayenne pepper
2 tsp fresh parsley (chopped)
1 tsp fresh rosemary (chopped)
1 tsp fresh ginger
1 Sweet red pepper
1 Sweet green pepper
2 Garlic cloves
1 Courgette
1 Bay leaf
1 Onion
                           

  • Chop unpeeled new potatoes and courgette into quarters then into thin chunks.
  • De-seed peppers and finely chop.
  • Peel and finely chop onion, ginger and garlic.
  • Add chopped vegetables, bay leaf and chopped rosemary to deep pan on high heat with olive oil.
  • Add vinegar, lemon juice and Cayenne pepper.  Season with salt and pepper.
  • Stir regularly for 3 minutes (do not allow to dry).
  • Add small chunks of salmon fillet (1cm x 2cm) and gently stir for 30 seconds.
  • Turn heat down and add 500 ml water.  
  • Check seasoning, stir occasionally and allow to cook for 7 minutes.
  • Remove bay leaf and take off the heat.
  •  Serve with roughly chopped parsley on top.
