Beef Style Rice Vegetarian



Beef Style Rice Vegetarian Recipe - The perfect winter warmer.

Ingredients:
100g White basmati rice
200g Beef style quorn
100g green runner beans
6 Brussel sprouts
½ Lime juice
1 De-seeded chili
1 Sweet pepper
1 tsp chopped ginger
1 tsp turmeric
½ tsp mustard seeds
2 tsp chopped parsley
1 tsp vinegar
1 tsp peri peri sauce
1 tsp soy sauce
2 tsp olive oil
2 Garlic cloves
1 Parsnip
1 Carrot
1 Onion
  
-    Peel and finely chop onion, garlic and ginger.
-    Add to hot pan with beef style pieces and olive oil.
-    Stir for 30 seconds on high heat.
-    Add 50 ml water and turn heat down to medium.
-    Peel and chop carrot with parsnip into small chunks.  Add to the pan.
-    Add green beans, rice and de-seeded sweet pepper and chili.
-    Add lime juice, soy sauce, turmeric and mustard seeds.
-    Stir on high heat for 30 seconds and then add 500 ml water.
-    Add Brussel sprouts cut in half.
-    Season with salt and pepper.
-    Stir regularly but gently for 10 minutes on medium heat.
-    Do not allow rice to dry to much, add 100 ml water each time.
-    Remove from the heat and cover with lid for 1 minute before serving.
-    Serve with chopped parsley.
