Greens Quorn Salad


Quorn Salad Recipe
Breaded Quorn medallion Salad with greens- a healthy vegetarian starter option.

Salad Ingredients:
500g Breaded Quorn pieces
200g Fresh watercress leaves
200g Fresh wild rocket leaves
2 Tables spoon chopped almonds
3 Sweet red peppers
3 Baby spring onions
2 Avocados
6 Fresh figs

Salad Dressing Ingredients:
1 Table spoon avocado oil
2 Table spoon olive oil
2 Table spoon Soy sauce
1 Table spoon Salad cream
1 tsp French mustard
3 tsp apple cider vinegar
1 tsp orange juice
1 tsp Chopped dill
1 tsp honey
Salt and pepper

  • Make the dressing by whisking all ingredients indicated above for 30 seconds and chill in the fridge for about an hour.
  • Grill Breaded Quorn pieces for 18 minutes, turn over half way.
  • Grill peppers for 6 minutes.  Turn over half way. Remove skin.
  • De-seed and cut into thin strips (this is called Julianne style).
  • Add peppers and washed green leaves to a large bowl.
  • Chop avocados, figs and spring onions.  Add to salad bowl with almonds.
  • Whisk the dressing again to combine all ingredients together.
  • Drizzle gently over the salad just before serving.
  • Place desired salad amount on a serving plate and place Quorn pieces on top.
    For better results, keep the dressing chilled until you are ready to serve.  Salad leaves only need a few seconds to soak up the fresh dressing flavours.

    Go easy on the dressing, as it does not require to much.  You can save the remaining dressing, it keeps well in the fridge for 3 days. Vinegar acts as a preservative.

    The contrast of fresh cold salad with hot Quorn pieces works very well here.
