Quorn Mash Pie



Quorn Mash Pie Recipe - The egg on top helps seal the pie
and adds a crusty top finish.  Tasty too!

Serves: 4
Preparation: 1 hr

Ingredients:
300 ml tomato sauce (for recipe click here)
500g potatoes (boiled)
200g Quorn mince
150ml semi skimmed milk
1 Table spoon butter
2 Organic courgettes
1 tsp Chopped fresh mint leaves
4 tsp Olive oil
1 Free Range egg
1 Small onion
Sea salt and black pepper to taste

- Pre-heat oven at 220 degrees Celsius.
- Stir fry mince with 2 tsp olive oil and chopped onion for 1 minute.
- Remove mince from the heat and add mince to a baking tray.
- Sprinkle chopped mint on top and pour tomato sauce on top.
- Season with salt and pepper.
- Stir fry courgettes (thinly sliced) with 2 tsp olive oil and a good
   pinch of salt for about 2 minutes.
- Place courgette slices on top of tomato sauce in baking tray.
- Prepare mash by mashing boiled potatoes until smooth.
- Add milk, butter and salt.  Stir well.
- Add potato mash over the courgettes until completely covered.
- Spread beaten egg on top and make wave shapes with fork.
- Bake in the oven for 40 minutes.

You may decide to cook all ingredients at once to save time.  If you are confident to multi task, then great.  But if you like to focus on each ingredient, it is ok too.
I recommend that each ingredient is cooked separately because it helps to retain the flavour of each ingredient.

Quorn mince is so versatile, from spaghetti Bolognese to burger, it is always handy to have in the freezer. 

Vegetarian mince is minutes away from a great snack.  Because of its texture it is safe to cook quickly.
Personally, I believe it tastes better than real meat mince.

This recipe was inspired by my friends Kelvin and Sara. 
They came over one afternoon for a cup of tea and mentioned how they really enjoyed a vegetarian shepherds pie with mash. 
Mash made from organic potatoes from their garden. 
Humm, it made me crave for mash that evening which inspired me to create this Quorn Mash recipe.
It was a cold evening, and what better comfort food can you ask for!
