Quince Marmalade
Quince Marmalade Recipe - Fruit Jam

quince can be bitter but it is ideal
to make Portuguese marmalade.

Preparation: 20 minutes
Ingredients:
4 Quince Fruit
300g Caster sugar
1 tsp White Portuguese Port
- Peel quince and chop into small pieces (olive size).
- Place chopped quince in a large frying pan with
sugar on low heat.
- Stir non stop for about 4 minutes sugar until sugar
has melted.
- Still on low heat, add Portuguese port and pour 200
ml boiling water slowly.
- Stir gently for about 10 minutes until smooth until
thickened into a custard consistency.
- Leave to cool down for a few minutes and pour into
a jar.
- Once cold, cover the jar and place in fridge for at
least 2 hours to set.
- Delicious with toast or with a cheese sandwich.
Keeps in the fridge for 2 weeks, 1 week once
open.
Alcohol is added to food preserves not just because people like the
taste but because it can help preserve food.
Traditional marmalade is made with quince not oranges. Portuguese have
been enjoying quince marmalade for centuries.
Quince is quite bitter in its raw state but once cooked with a
bit of sugar it turns into nectar. Great on hot toast with butter or
great for a picnic as an extra filling for a cheese bread roll.
