This prawn stir fry recipe can be ready in minutes.
By: Isabel Robson
Serves: 2
Preparation: 10 minutes
Ingredients:
500g Large Prawns (peeled)
200g spaghetti (you can use large noodles)
5 Fresh Green cabbage leaves
1/2 Cup of loose sweet corn
1 Medium hot chili (de-seeded)
1 Table spoon olive oil
1 Medium onion
Salt
- Boil spaghetti pasta for 3 minutes, drain and drizzle olive oil to
avoid sticking together.
- Wash cabbage leaves and cut out middle stoke. Roll leaves
tightly and cut sideways into thin strips. Watch your fingers
here.
- Stir fry cabbage strips with olive oil and finely sliced onion.
- Stir on medium heat for 4 minutes and season with salt.
- Add prawns, chopped chili and sweet corn, stir for another minute or
so.
- Add spaghetti and fold gently for 1 minute to infuse pasta with the vegetables.
- Ready to serve.
I deliberately left strong spices with the exception of the chili.
Prawns give a wonderful flavour to a stir fry dish. By not
overpowering this recipe with lots of flavours, you can taste the
prawns as is for a change.
To help reduce overfishing demand, I treat prawns as a
delicacy. Like all other gifts of nature to be treated with
respect.
Hope you enjoy this recipe as much as I have.
