Potato Soup Recipe- Potato And Leek Soup

Serves: 4
Preparation: 12 minutes

    Ingredients:
    500 g Potatoes
    500 g Leeks
    1 Garlic glove
    1 Celery stem
    ½ tsp Chopped lemon grass
    3 Bread toast slices
    1 Table spoon salt
    ½ tsp Pepper

  • Chop all vegetables and boil for about 5 minutes.
  • Add salt and pepper.
  • Blend all ingredients together.
  • Pass through a strainer for a smoother texture.
  • Take soup to low heat for 2 minutes, stir regularly.
  • Cut toast slices into small croutons.
  • Serve hot and decorate with croutons.

Celery contains 23% sodium which reflects the percentage found in bones.  This ingredient promotes healthy bones and it is low in calories.
