Gherkins Potato Salad


Potato Salad Recipe

Serves: 2
Preparation: 25 minutes

Ingredients:
1 tsp Fresh lemon thyme leaves
1 tsp Fresh chopped mint leaves
400 g New potatoes
100 g Mayonnaise
2 Organic Tomatoes
2 Boiled free range eggs
2 Large gherkins
1 Green pepper
1 Red pepper
1 Red onion

  • Boil eggs and new potatoes for 10 minutes in separate pots.
  • Drain potatoes, peel eggs and leave to cool down.
  • De-seed, cut in quarters, grill peppers for about 5 minutes each side.
  • Once peppers are cooked, remove skin and chop into small strips, leave to cool down.
  •  Chop onion finely, add to large bowl with potatoes cut into half.
  • Add chopped peppers, lemon thyme, mint and mayo
  • Serve cold with sliced tomatoes and eggs.
Healthy tip: Tomatoes are loaded with lycopine, beneficial to the heart
and blood. It is also claimed that it prevents prostate and reduces risk of cancer.
