Portuguese Vegan Salad
Portuguese Vegan Salad Recipe -
This
vegan recipe is great for a
picnic food suggestion.

Preparation: 10 minutes
Ingredients:
2 Large potatoes (300g)
100g green runner beans
1 Table spoon dry tomatoes
1/4 tsp Nutmeg
1/2 Lime juice
1 Small onion
1 Small lettuce
Virgin olive oil
- Peel and chop potatoes into cubes (2 x 2 cm).
- Boil potatoes for 3 minutes (or until firm but
cooked).
- Drain potatoes and add to a large bowl.
- Drizzle 1 table
spoon of olive oil over potatoes.
- Chop green beans into strips (3 cm long) and boil
for 2 minutes.
- Drain and add to the bowl.
- Once potatoes and green beans have cooled down,
add peeled and finely chopped onion with 1 table spoon
of olive
oil.
- Add Nutmeg (ideally fresh but can use powder) and
1/2 lime juice.
- Chop dry tomatoes in bite size chunks and add to
the salad.
- Season with salt and pepper and mix gently.
- Serve salad in bed of lettuce.
