Portuguese Vegan Salad


Portuguese Vegan Salad Recipe - This vegan recipe is great for a picnic food suggestion.

Ingredients:
2 Large potatoes (300g)
100g green runner beans
1 Table spoon dry tomatoes
1/4 tsp Nutmeg
1/2 Lime juice
1 Small onion
1 Small lettuce
Virgin olive oil
  • Peel and chop potatoes into cubes (2 x 2 cm).
  • Boil potatoes for 3 minutes (or until firm but cooked).
  • Drain potatoes and add to a large bowl.  
  • Drizzle 1 table spoon of olive oil over potatoes.
  • Chop green beans into strips (3 cm long) and boil for 2 minutes.  
  • Drain and add to the bowl.
  • Once potatoes and green beans have cooled down, add peeled and finely chopped onion with 1 table spoon of olive oil.
  • Add Nutmeg (ideally fresh but can use powder) and 1/2 lime juice.
  • Chop dry tomatoes in bite size chunks and add to the salad.
  • Season with salt and pepper and mix gently.
  • Serve salad in bed of lettuce.
