Polenta Muffins are delicious, an alternative to scones,
make them sweet or savoury to suit your taste buds.
Serves: 6
Preparation: 30 minutes
Ingredients:
300g Fine Corn meal flour
100g White sugar
100ml milk
2 Grated apples (Royal Gala)
3 Free range eggs
1 tsp Baking powder
1 tsp Vanilla extract
1 tsp cinnamon powder
2 tsp olive oil
- Pre-heat oven at 200 degrees.
- Blend all ingredients together until smooth.
- Pour mixture into pre-greased muffin tins, 3/4 full.
- Bake in the oven for 20 minutes.
- Remove from the oven and dust sugar on top.
Delicious hot served with butter or on its own.
This sweet bread muffins recipe is very versatile. I like to cut a
muffin in half and add a generous spoon of chocolate
spread. Excellent with fruit jam too.
