Sweet Bread Polenta Muffins


Polenta Muffins are delicious, an alternative to scones,
make them sweet or savoury to suit your taste buds.

Preparation: 30 minutes

Ingredients:
300g Fine Corn meal flour
100g White sugar
100ml milk
2 Grated apples (Royal Gala)
3 Free range eggs
1 tsp Baking powder
1 tsp Vanilla extract
1 tsp cinnamon powder
2 tsp olive oil

  • Pre-heat oven at 200 degrees.
  • Blend all ingredients together until smooth.
  • Pour mixture into pre-greased muffin tins, 3/4 full.
  • Bake in the oven for 20 minutes.
  • Remove from the oven and dust sugar on top.

Delicious hot served with butter or on its own.

This sweet bread muffins recipe is very versatile.  I like to cut a muffin in half and add a  generous spoon of chocolate spread.  Excellent with fruit jam too.
Sweet bread muffins are not just for dessert, works as a breakfast suggestion also.
