Plantain Soup
Plantain Soup Recipe - Plantain
looks like a large banana but tastes
more like a starchy potato.
This can
absorb other flavours very easily, also
excellent for
chunky chips. Good source of vitamin A and
potassium.

Serves: 4
Preparation: 25 minutes
Ingredients:
2 Plantain fruits
3 Medium carrots
1 Small heart cabbage
2 Small potatoes
1 Small onion
3 Garlic cloves
1 Sweet green pepper
5 Fresh sage leaves
½ lemon zest
3 tsp olive oil
Black pepper
Sea Salt
- Peel, chop onion and add to deep pan
with olive oil.
- Stir on high heat for 30 seconds and
add crunched garlic and sage.
- Add peeled and finely chopped plantain,
potatoes, carrots and fine strips of cabbage.
- Stir regularly for 3 minutes, adding
lemon zest, finely chopped green pepper and season to taste.
- Pour 1 litre water, allowing to simmer
for 15 minutes.
- Check seasoning and simmer for another
5 minutes until potatoes are soft when pricked with a fork.
- Ready to serve.
Personally,
I do not find it necessary to add vegetable stock to make any soup or
casserole. No need to add vegetable flavour to vegetables!
You
can use the natural flavours already in the soup, the reward is a fresh
and tasty soup!
Garlic
and sage will add lots of kick, to balance the sweet plantain and help
reduce the amount of sea salt required to season.
