Plaice With Mint Pesto
Plaice Recipe - Mint
pesto is hot, use in moderation.
The heat of the pesto is a great contrast to this humble fish.

Preparation: 15 minutes
Ingredients:
2 Fresh Plaice fillets
2 tsp Olive Oil
4 tsp
Mint pesto
Salt and pepper to taste
- Season Plaice with salt and pepper on both sides.
- Bake fish fillets in hot oven at 220 degrees Celsius for about 10
minutes.
- Pre-heat mint pesto and spread 2 tsp on each place
- Take fish fillets off the heat and serve on top of mint pesto.
- Decorate with tomato slices.
How to make
mint pesto:
Ingredients:
10 Fresh Mint leaves
1 tsp Rice vinegar
1 tsp Soy sauce
1 tsp Corn flour
2 tsp Brown sugar
1 Chili (de-seeded)
2 Small green spring onions
2 tsp Olive oil
5 Small capers
1 Cup cucumber chunks
5 Cumin seeds
- Blend all ingredients together and take to the low heat.
- Add 2 table spoons of water. Season with salt and pepper.
- Stir non stop for 3 minutes until pesto sauce is smooth and thick.
- Ready to serve.
This is a hot curry style pesto recipe, you can prepare it in advance
and keep it in the fridge for up to 7 days. Store it in a closed
jar. Add 2 tsp to a pasta sauce to give it an extra kick.
