Historic references to the first pizzas in Portugal, refer to
dough being stretched, garnished with various ingredients and folded in
half to be cooked in a stone oven. More like what we call a pie
in England.
The first pizza ovens would have been made from volcanic rock, the best
material that can sustain the high temperatures desired for the best
pizza.
With the variations the followed and lost translations, by the XVIII
century, the pizza evolved into an open dough circle baked in stone
oven with ingredients exposed.
The first pizzeria opened in Naples around 1830, it is thought that
prior to this period, pizzas would be sold in main square by street
sellers.
