Papaya Stir Fry
Papaya Stir Fry Recipe
A
papaya recipe for a refreshing taste
to contrast the spicy heat
of chili.

Preparation: 12 minutes
Ingredients:
200g new potatoes
6 Black olives
1 Medium parsnip
1 Medium carrot
1 medium shallot onion
1 Small courgette
2 Garlic cloves
1 tsp pine nuts
1 Cup chopped papaya
½ Cucumber
½ Lemon juice
3 tsp olive oil
3 tsp vegan wine
1 tsp Peri Peri sauce
1 Red sweet pepper
1 tsp soya butter
10 chili seeds
Black pepper
Sea salt
- Pre-boil sliced courgette and potatoes
in separate pans. Drain and leave to one side.
For
best result only part boil. These will cook further later on.
- Slice and part boil carrot with
parsnip
for 3 minutes. Drain.
- Meanwhile grill sweet pepper for
4
minutes or until skin can be peeled easily under cold water
tap.
Cut Julianne style (into thin strips).
- Finely chop onion and garlic and
add to
hot pan on low heat.
- Add pine nuts chopped in half,
potatoes, courgette and fresh papaya chunks.
- Turn heat up and gently stir for
1
minute.
- Add remaining ingredients
(except
cucumber and olives) and gently stir for 4 minutes on medium
heat.
- Decorate with finely sliced
cucumber
slices and olives.
