Portuguese Oven Cod Recipe - this is an
interpretation of Bacalhau A Gomes Sa.
The original recipe was created by Mr Gomes from North of Portugal. Bacalhau is Cod in Portuguese.

Preparation: 30 minutes
Ingredients:
1 kg Potatoes
500 g Fresh Cod fillets
50 g Black olives
3 Garlic cloves
2 Medium Onions
3 tablespoons olive oil
4 Free range boiled eggs
1 Large Bay leaf
Salt and pepper
- Peel and slice potatoes (1.5 cm
thick). Boil for 5 minutes and drain.
- Boil cod for 6 minutes. Drain and also set aside.
- Pre heat oven at 220 degrees.
- Stir fry chopped onions and garlic with bay leaf and olive oil until
onions soften.
- Place cod in the middle of baking dish and potato slices around the
cod.
- Add fried onions and garlic over the cod.
- Sprinkle with olive oil and place in hot oven for about 15 minutes.
- Meanwhile boil eggs for about 12 minutes.
- Take baking dish out of the oven and decorate with egg slices and
olives.
- Serve hot with a drizzle of olive oil.
