New Potato Salad Recipe

Serves: 4
Preparation: 20 minutes

Ingredients:
6 Medium baby potatoes
100g Water Cress
100g Mayonnaise
100g Boiled chick peas
3 Basil fresh leaves
1 Organic cucumber
1 Garlic glove
Salt and pepper

  • Peel, chop in quarters and boil potatoes for about 7 minutes.
  • Potatoes should be firm but soft when pricked with a knife.
  • Drain potatoes and leave to cool down.
  •  Peel and chop cucumber into small squares, chop onion finely.
  • Add crushed garlic and remaining ingredients into a large bowl .
  •  Fold gently remaining ingredients together with mayonnaise.
  • Serve cold in a water cress bed.
    Potatoes are an excellent source of Vitamin C , B and minerals.  It can also lower stress levels, help prevent heart disease and cancer.
