- Peel, chop in quarters and boil potatoes for about 7 minutes.
- Potatoes should be firm but soft when pricked with a knife.
- Drain potatoes and leave to cool down.
- Peel and chop cucumber into small squares, chop onion finely.
- Add crushed garlic and remaining ingredients into a large bowl .
- Fold gently remaining ingredients together with mayonnaise.
- Serve cold in a water cress bed.
