Mushroom Tagliatelle Recipe

Ingredients:
500g Tagliatelle pasta (or fettuccine)
250g Button mushrooms
500ml single cream
1 Table spoon white port
1 tsp French mustard
1/2 tsp turmeric
2 Garlic cloves
1 Bay leaf
Olive Oil
Salt and Pepper
Coriander to decorate

  • Boil pasta for 3 minutes. Drain and leave to one side (drizzle with olive oil to avoid drying out).
  • Chop garlic finely and add to large frying pan and 1 table spoon of olive oil.
  • Add sliced mushrooms and stir fry for 1 minute. Season with salt and pepper.
  • Add turmeric, white port, bay leaf, mustard and stir with pasta gently for 30 seconds on high heat.
  • Turn heat down and pour cream, stir regularly for 1 minute.
  • Serve hot and decorate with coriander.

    Mushrooms can help control blood pressure, lower cholesterol, kill bacteria, fight cancer and strengthen bones.  This ingredient is also low in calories.
