Mung Beans Recipe

Ingredients:
100g Mung Al lentils (beans)
50g green soya beans
1 tsp Turmeric
4 Garlic cloves
1 Red Pepper
2 Table spoons Olive oil
1 Avocado
Salt and pepper
  • Grill red pepper for 6 minutes.  Peel and cut into thin strips and leave to one side.
  • Stir fry garlic with turmeric and 1 tsp olive oil for minute.
  • Add Mung al lentils and boil for 10 minutes with 500 ml water on low heat.
  • Season with salt and pepper.
  • Stir regularly and add more water if necessary, stir until mung lentils are soft.
  • Drain any excess water.
  • Boil soya beans for 5 minutes. Drain and season with salt and pepper.
  • Assemble into a baking cup add mung lentils followed by layer of pepper strips, another spoon of mung lentils, then soya beans and mung lentils on top.
  • Drizzle olive oil and bake for 15 minutes at 220 degrees.
  • Decorate with parsley, grilled avocado and a drizzle of balsamic vinegar.
