Healthy Muli Soup


Muli Soup Recipe  - I created this vegan recipe when I first cooked with muli (also known as mooli) vegetable.

Serves: 2
Preparation: 10 minutes

Ingredients:
200g Fresh Muli (large radish)
100g Potatoes
100g Baby carrots
1 Table spoon loose sweet corn
1 Garlic clove
1/4 Mustard seeds
Virgin olive oil
1 tsp chopped parsley

  • Peel and chop potatoes, muli and garlic.
  • Place in deep pan with 700ml water and boil for 3 minutes.
  • Add mustard seeds, season with salt and pepper and blend together until smooth.
  • In a separate pan add peeled and thinly sliced carrots. Boil carrots with sweet corn for 2 minutes.
  • Take blended ingredients with carrots, sweet corn back on the heat.
  • Stir regularly for 1 minute and check seasoning.
  • Serve with chopped parsley.
