Ingredients:
2 Mozzarella cheese balls
1 Orange sweet pepper
2 Shallots (sliced)
1 Cup cucumber (diced)
1 Cup new potatoes (boiled)
1 Table spoon chopped parsley
1 Table spoons olive oil
1 Medium carrot (sliced)
1 tsp fresh dill (chopped)
2 tomatoes (sliced)
5 Free range eggs
Salt and pepper
- Stir fry sliced
onion and carrots with olive oil for 1 minute.
- Add finely diced sweet pepper and chopped boiled
potatoes.
- Season with salt and pepper.
- Add chopped cucumber and dill. Stir for 2
minute on medium heat.
- Pour beaten eggs in the pan.
- Add sliced tomato and mozzarella and cook on low
heat for 1 minute.
- Put under the grill for 5 minutes.
- Serve with chopped parsley.
Do not worry about the juices from mozzarella. With
a kitchen towel, clean excess juice if you prefer.
Adding carrot, potato, sweet pepper, cucumber and
onion to this omelette recipe is a good way to incorporate your 5 a day all
in one meal.
