Quorn Mince Bake
Vegetarian Mince Bake With Ginger

Preparation: 2 hrs 15 minutes
Ingredients:
200g Quorn mince
1 Onion shallot
2 Garlic cloves
3 tsp White wine
1 tsp Rosemary leaves
5 tsp Olive oil
3 tsp Worcestershire sauce
3 Medium carrots (sliced)
1 Large Zucchini (courgette)
6 Medium potatoes (sliced)
350 ml tomato sauce
1 Red chili (medium heat)
150g Red Leicester cheese
10 Black pitted olives
1 Large mozzarella cheese
10 Fresh Basil leaves
1 tsp ginger powder
- Pre-heat oven at 180 degrees Celsius.
- Chop garlic and garlic. Add to large baking tray with olive oil.
- Add mince Quorn and pour white wine on top.
- Sprinkle ginger power and chopped chili (de-seeded).
- Pour Worcestershire sauce and season to taste.
- Add chopped rosemary leaves and sliced carrots.
- Add a layer of sliced zucchini
- Follow with a layer of sliced potatoes.
- Pour tomato sauce and add grated Red Leicester cheese.
- Add black olives on top and drizzle with olive oil.
- Place in the oven for 2 hours at 180 degrees.
- Check half way to ensure it is not to dry.
Add 1/2 cup hot water if necessary.
- After baking for 2 hours, add mozzarella slices and basil leaves
on top. Back in the oven for 10 minutes.
- Remove from the heat for 1 minute before serving.
This
recipe is very easy to make, requires
little
assembly but the ingredients do all the work.
