Grilled Scallops With Spices



Grilled Scallops Recipe - This grilled fish recipe is low in fat. 
A good alternative for cooking fish at a barbecue.

Serves: 2
Preparation: 20 minutes

Ingredients:
300g Fresh Large Scallops
100g Rocket or Cress salad
2 Fresh figs
1 tsp Turmeric
¼ tsp Paprika
½ lime juice
1 tsp Salt
1 tsp olive oil
Pepper

-    Squeeze half lime juice into a bowl, add spices and olive oil.
-    Season with salt and pepper.
-    Marinate fresh scallops in to juice for 10 minutes
      (for best results leave for at least 30 minutes).
-    Grill scallops for 4 minutes either side.
-    Serve in a bed of green salad and figs.

Marinating scallops is very important to allow the flavours to be absorbed.  If the scallops are quite small, they only require only 2 minutes either side.  Overcooking may make them tough.  Always ensure they are as fresh as possible.
