Green Salad With Chili Dressing


Green Salad Recipe with hot dressing.

Serves: 2
Preparation: 10 minutes

Ingredients:
1 Avocado
1 Baby Lettuce
½ Cucumber
½ Corgette
20 g Mustard Cress
1 Green chili
10 Basil leaves
10 g Chives
10 g Coriander
1 Lime
3 Soup spoons olive oil
2 tsp Rice Vinegar

  • Peel avocado, cut in half and make some horizontal incisions without splitting avocado in half.
  • Place avocado in the middle of a large dish. Squeeze very gently to open half like a fan.
  • Wash and split baby lettuce leaves. Decorate with Basil leaves on top.
  • Peel and slice cucumber and courgette.
  • Chop watercress, coriander and chives. Place on side of dish.
  • Drizzle chili dressing over salad.

     How to prepare the Chili Dressing:
  • De-seed and chop chilies finely. Marinate in lime juice for at least 5 minutes in a bowl.
  • Add rice vinegar, olive oil, salt and pepper.
  • Whisk for about 30 seconds or until thickened.
  • Ready to serve.
