Goji Berry Cake


Goji Berry Cake Recipe

A moist sponge fruit cake full of flavour.  This is a sweet cake with lots of delicious fruit.

Ingredients:
2 Tablespoons of
blackcurrant jam
300 Whipping cream
250 g self rising flour
200 g caster sugar
6 Free range eggs
50 g Goji Berries
1 lemon
50 g Butter
1 Vanilla pod
2 Bananas
1 Kiwi

  • Separate eggs and leave egg whites in a deep bowl to one side.
  • Mix egg yolks with sugar, add zest of lemon and vanilla pod seeds.
  • Add flour and butter to the mix. 
  • Mash 1 banana and mix in bowl together with Goji berries (save about 10 berries for decoration later).
  • Beat egg whites until firm and fold gently to the mix.
  • Grease two baking cake bases and divide mix equally.
  • Put in preheated oven at 210 degrees for 20 minutes.
  • Turn off oven and leave for 1 minutes then remove baking cases to rest for another 2 minutes.
  • Separate one cake slowly to a large plate and spread jam on top.  Leave to cool down for about 10 minutes.
  • Cut the other banana into thick slices (1cm) and place them on the top end of the cake.
  • Whip cream and spread a generous layer (2cm) on top.
  • Place the second baked cake on top without pressing it.
  • Spread remaining cream on top, decorate with kiwi slices and Goji berries.
  • Ready to eat.

Goji berries are high in antioxidants, full of essential minerals and amino acids.  Promotes body fat loss and has been found to be more nutritional than spinach. Helps fight bacterial infections.

Kiwi provides an excellent source of Vitamin C. Also contains vitamin A and E, potassium and magnesium. It promotes better respiratory health.

Banana is rich is vitamin A, can improve skin conditions and can be a healthy alternative to help reducing depression. This ingredient is also rich in potassium and is good for the heart and nervous system.  It can reduce the risk of osteoporosis. Excellent for the blood as it also contains Vitamin 6.
Bananas can promote regular bowel movement but also reduce diarrhea symptoms. Can contribute to strengthen bones.

Lemons are an excellent source of vitamin C and have antioxidant and anti-cancer properties. Whole lemons like limes have properties that help combat cancer, protect the heart, control blood pressure and promote smooth skin.

These are only some of benefits of using fresh ingredients.  More fun to contemplate these facts when savouring each bite, rather than feeling guilty of having a dessert!
