Funghi Al Forno
Funghi Al Forno Recipe - Grilled Mushrooms with cream cheese Italian
style.

Preparation: 10 minutes
Ingredients:
100g Ricotta cheese
200g Medium Organic mushrooms
1 Table spoon olive oil
5 Fresh Spinach leaves
1 tsp butter
1 tsp olive oil
½ tsp salt
1 Garlic clove
2 small tomatoes
1 tsp watercress
Pepper
- Finely chop spinach and mix to ricotta
cheese in a bowl.
- Crush garlic and add to the
mixture.
- Add butter, salt and pepper to
taste,
stir well until smooth.
- Spoon mixture into hollow
mushrooms.
- Brush mushrooms with olive oil
and
grill for about 5 minutes.
- With a sharp knife peel the skin
of a
tomato (without breaking the peel).
- Twist tomato peel into serving
dish
until it reaches shape of a rose.
- Place 3 grilled mushrooms per
person
and decorate with water cress.
Ricotta
cheese is high on
magnesium and calcium.
Also contains Vitamin A.
