Fish Sauces And Dipping Sauce Recipes


These fish sauces and vegetarian dips are also great with cooking with Quorn meat alternatives, soya and other vegetables instead of fish.

Almond Sauce
Ingredients:
2 garlic clove
1/4 tsp chopped ginger
1/2 cinnamon stick, 1/2 tsp paprika
1tsp turmeric powder, 1 onion, 1 chili
1/2 tsp chopped coriander leaves
3 table spoons ground almonds
1 table spoon olive oil.

To make almond sauce:
  • Chop garlic, ginger, onion, tomato and chili.
  • Stir fry in hot pan with olive oil on high heat for 1 minute or until onions soften. 
  • Add chopped coriander, cinnamon stick, paprika and turmeric powder and stir for 1 minute. 
  • Add ground almonds with 100 ml water.
  • Let it simmer on low heat for 5 minutes and stir every other minute. 
  • Pass sauce through a sieve, leaving a very smooth but thin sauce. 
  • Put sauce back on medium low heat and add the cream slowly.  
  • Stir regularly for another 2 minutes or until sauce thickens (do not allow to boil) 
  • Ready. 
These fish sauces recipe is recommended for monk or sword fish recipes. It is one of my favourites, a rich sauce with sweet flavour.


Beetroot Sauce
Ingredients:
1 Beetroot
1 Bay leaf
1 tsp apple cider vinegar
2 table spoons of olive oil. 

To make beetroot sauce:
  • Peel and chop beetroot.
  • Take to the heat with vinegar, bay leaf and olive oil. 
  • Stir for 2 minutes. Strain beetroot and remove bay leaf. 
  • Ready. 
These fish sauces recipe is very tasty with prawns.


Caramel Liquid or Sugar Syrup

Cheese And Chives Dipping Sauce
Ingredients:
1/2 tsp Turmeric powder
1 Garlic clove (crushed)
1/2 tsp Ginger powder
6 tsp Light Salad cream
1 tsp chopped parsley
2 tsp chopped chives
1/2 tsp chopped coriander
2 tsp crumbles of Lancashire cheese
1 tsp Virgin olive oil
1/2 tsp Rice Vinegar
Salt and pepper to taste

To make cheese and chives dipping sauce:
  • Peel and crunch garlic.
  • Blend garlic with turmeric, ginger, salad cream, olive oil, rice vinegar and cheese until smooth.
  • Season salt and pepper to taste.
  • Add parsley, coriander and chives to the mixture.
  • Blend again for 20 seconds.
This dipping sauce is great on top of grilled cod, sword fish, Quorn,  roasted vegetables or tortillas.


Cumin Fish Sauce
Ingredients:
1 Table spoon white wine
2 tsp Cumin seeds
2 tsp Soy sauce
2 tsp Virgin olive oil
1 tsp Worcester Sauce
1 tsp Coriander
1 tsp Vegan butter
1/2 Turmeric powder
1/2 tsp Ginger powder
1 Garlic clove
Salt and Pepper

To make Cumin fish sauce:
  • Crush garlic with cumin seeds
  • Add finely chopped coriander and remaining ingredients.
  • Stir well and cover both sides of fish fillet.
  • Marinate for 30 minutes and grill fish for 10 minutes.
These fish sauces works great with Sea Bass or Sea Bream.


 Mint Sauce
Ingredients:
15 fresh mint leaves
1 tsp fresh oregano leaves (chopped)
1 table spoon of chopped cucumber
1 tsp honey
1 tsp olive oil
salt and pepper.

To make mint sauce:
  • Blend chopped herbs, cucumber, honey, olive oil and season with salt and pepper. 
  • Ready.
These fish sauces are recommended for Trout, Tuna and Mackerel.


Paprika Sauce   
Ingredients:
500 ml milk
3 table spoons butter
2 table spoons flour
2 tsp paprika
salt

To make paprika sauce:
  • Heat milk and add butter.
  • Season with salt and add flour, whisking regularly.
  • Add the paprika slowly and stir regularly. (no more than 2 minutes).  
  • Ready. 
This sauce goes very well with Halibut and Sea Bass fish.


Peanut Sauce
Ingredients:
1 Table spoon honey
1 Table spoon butter
2 tsp ground peanuts (unsalted)
1/4 tsp turmeric
1 tsp finely chopped onion
1 crushed garlic
1/4 Sea salt
2 tsp olive oil
Pepper

To make Peanut sauce:
  • Crush together onion, garlic, sea salt, turmeric, olive oil with a pinch of pepper.  
  • Add the crushed ingredients in bowl and stir in butter and peanuts until sauce is smooth. 
This sauce is great for fish in barbecues .  It can be used hot by heating in pan, stir in 2 table spoon of single cream and stir for 2 minutes.  Recommended in scallops and prawns.


Pepper And Coriander Sauce
Ingredients:
1 Red sweet pepper
75 g fresh coriander
olive oil
1/4 lemon juice
salt
pepper

To make Pepper and Coriander Sauce:
  • Grill pepper for 6 minutes (turn over half way).
  • Allow to cool down for 1 minute and remove outer skin (should be easy to remove under water).
  • De-seed and chop pepper finely. 
  • In a bowl mix chopped pepper and coriander. 
  • Add lemon juice, olive oil and season with salt and pepper. 
  • Ready. 
This sauce is delicious with mackerel and salted cod.


Piri Piri Sauce
Ingredients:
1 table spoon sweet tomato sauce
1 onion
2 garlic cloves
3 chilies
1/2 lemon juice
1 tsp paprika
1 tsp wine vinegar
salt
pepper

To make the piri piri sauce:
  • Blend all ingredients together
  • Season with 1/4 tsp salt and a 1/4 pepper. 
  • Ready. 
This sauce is recommended with prawns, mussels.


Salsa Verde Sauce
Ingredients:
2 Table spoons olive oil
2 Table spoons of chopped coriander
1 Table spoon wine vinegar
2 Small Gherkins
Black pepper
Sea Salt
1/2 lemon juice
1/2 French mustard
1 Crushed garlic

To make salsa verde:
  •  Crush 1 garlic and finely chop gherkins. 
  • Mix well with mustard, olive oil, lemon juice and vinegar. 
  • Season with salt and pepper. 
  • Add chopped coriander. 
  • Ready to serve. 
Ideal with breaded vegetables, sardines, mackerel and Bream.


Sweet Chili Sauce
Ingredients:
1 tomato
2 chilies
1/2 lemon juice
1 table spoon olive oil
1 tsp Tabasco sauce
1 garlic clove
2 table spoons honey

To Make the chili sauce:
  • De-seed tomato and chilies.
  • Blend tomato and chilies with Tabasco sauce, lemon juice, garlic, honey and  olive oil. 
This sauce is recommended with prawns and scallops.



Tartare Sauce (Tartar)
Ingredient:
4 small gherkins
10 capers
3 table spoons mayonnaise
1/2 lemon juice
1 tsp chopped parsley
1/2 small onion
salt
pepper

To make tartar sauce:
  • Chop gherkins, capers, onion and parsley,
  • Season with salt and pepper. 
  • Add mayonnaise and lemon juice and mix well.  
  • Ready. 
The popular British fish and chips recipe is best served with this fish sauce.  Recommended with Battered Cod, Coley and breaded Haddock fish.


Tomato Sauce
Ingredients:
4 ripe tomatoes
1 garlic clove
1 onion
olive oil
salt
pepper

To make tomato sauce:
  • De-seed tomato.
  • Chop tomato, garlic and onion. 
  • Gently stir fry on high heat for 1 minute. 
  • Add 300 ml water and let it simmer on low heat for 5 minutes. Blend. 
  • Sauce ready. 
This sauce is recommended to be served with pasta, grilled sardines or mackerel.


Turmeric Sauce
Ingredients:
1 table spoon olive oil
2 table spoons coconut cream
2 tsp turmeric powder
1 garlic clove
1/2 tsp chopped dill
pepper
salt

To make Turmeric sauce:
  • Crush garlic and take to the heat  with olive oil.
  • Add chopped dill, pinch of salt and pepper and turmeric powder.  
  • Stir on high heat for 30 seconds before adding coconut cream. 
  • Turn heat down and stir for 2 minutes.  
  • Ready.   
This sauce recipe is recommended for tofu, Tilapia, Sea Bream and Sea Bass.


White Sauce
Ingredients:
500 ml milk
3 table spoons butter
2 table spoons flour
200g grated cheese
salt

To make white sauce:
  • Heat milk  and add butter.
  • Season with salt and add flour, whisking regularly.
  • Add the cheese slowly and stir regularly until sauce thickens (no more than 2 minutes) 
This sauce is recommended for pasta, lasagna, salmon, Basa and coley fish.
