Portuguese Fish Pot Casserole
Fish Pot Casserole Recipe - Caldeirada de Peixe
(Fish
Pot Casserole in
Portuguese). This
is typically a white fish hot pot but
this dish is
versatile, so
I have added salmon to
the pot.

Serves: 4
Preparation: 40 minutes
Ingredients:
1 monk fish fillet (de-boned)
1 tsp chopped coriander
1 tsp chopped
lemon
thyme
1 salmon fillet
1 haddock fillet
500g Potatoes
2 tomatoes
50 ml white wine
2 Carrots
1 Onion
2 Garlic cloves
4 eggs
2 tsp paprika
Olive Oil
- Chop garlic,
onion, tomatoes and stir fry in pan for 1 minute.
- Add fish fillets, paprika, chopped
potatoes, sliced carrots, coriander, thyme, white wine and 500
ml water.
- Cook on medium heat for 25 minutes.
- Serve hot with bread.
This recipe can be cooked with your
favourite fish. Salmon was chosen
for its rich oil content and the
perfect companion for monk fish.
